Claypot Chicken Rice with sausage, shitake mushrooms, vegetarian char siew and salted fish

My sincerest apologies to my dear WordPress readers and friends. I haven’t posted a thing since the last day of NaPoWriMo last month. Unfortunately, I have become addicted to candy crush hahaha I know, I’m quite late to join this craze! Candy Crush and Korean dramas have taken up my free time😀 Anyways, I haven’t been dining out much lately, my mom has been whipping up all the meals we’ve been eating, breakfast, lunch and dinner instead of going out to eat this month. Healthier meals for May! This is what mom made for breakfast today, Claypot Chicken rice with sausage, shitake mushroom, vegetarian char siew and salted fish.

Ingredients

500g chicken
300g rice
420ml water

Marinade

1/4 teaspoon dark soy sauce
1 tablespoon oyster sauce
1/4 teaspoon ground white pepper
1 tablespoon minced ginger
1 tablespoon minced garlic
1 teaspoon sugar
1/2 teaspoon salt

<Sauce

1 tablespoon oyster sauce
1/2 tablespoon dark soy sauce
1 tablespoon light soy sauce
2 tablespoons water

Garnish

1 sliced spicy sausage/chorizo
1/3 of a block of sliced Vegetarian Char Siew
5 fresh shitake mushrooms sliced
Salted fish
A handful chopped spring onions

Method

1. Slice chicken into smaller pieces.

2. Mix all the marinade ingredients in a bowl and marinate the chicken pieces, you can leave it in the fridge whilst you cook rice.

3. Wash rice till water runs clear and place into a a mid sized ceramic pot from Happy Call, you can use a clay pot, with water. Cook the rice on medium heat and make sure lid covers it. Cook till almost all the water is absorbed.

4. Place the chicken, marinade, sliced sausage, vegetarian char siew, shitake mushrooms and salted fish over the rice, and pour in 2 tablespoons of the sauce.

5. Reduce the heat and continue cooking the rice, covered, until rice and chicken are cooked, which will take about 15 minutes.

6. Flake the rice, cover lid and cook for further 5minutes. Remove from heat. Sprinkle chopped spring onions. Eat!
