I made these truffles as part of Joycey’s birthday present, I filled up multi coloured pails with homemade goodies like chocolate chip cookies, brownies, cranberry shortbread and truffles. Here’s a pretty easy recipe for chocolate truffles. One can also prettify it by putting edible decorations and placing each truffle into papercups.

Ingredients:
12 oz Chocolate Chips
1/2 cup of Condensed Milk
1 teaspoon Vanilla Extract
1 cup Almond Slivers (dry roast)
Unsweetened Cocoa

Directions:
1. Melt chocolate chips either using a double boiler, or if in a microwave, nuke for 3 mins, taking it out after every minute and stir.
2. Add condensed milk & vanilla extract
3. Stir well, leave to cool and slightly hardened in the fridge for about half an hour.
4. Scrape the truffle with a spoon, form into balls.
5. Roll the truffles in cocoa and the almond slivers.
6. Keep refrigerated until serving.

A simple non-alcoholic pick-me-up, pretty easy and simple to do which I make for my friends and family. Some people go clubbing, drinking or what not during college, I spent my time on the dancefloor, the lecture theater or the kitchen baking.

Ingredients:
3 egg yolks
1/3 cup icing sugar
2 teaspoons vanilla extract
250 gm mascarpone cheese
24 ladyfingers/spongefingers
1 cup coffee (Nescafe works)
Unsweetened cocoa powder
Cadbury Velvet (Or get a bar of dark chocolate and use an peeler/knife and make curls of chocolate)

Directions:
Beat yolks with sugar and vanilla until smooth and light yellow. Fold mascarpone into yolk mixture. Set aside.

Soak spongefingers in coffee and arrange 6 of them in the bottom of a dish(whatever, I dunno what size, something similar to Sara Lee pound cake packaging or if you’re making a birthday cake, the spring release ones would be ideal). Make sure the spongefingers are not too soggy. Spread half the mascarpone mixture over the spongefingers. Repeat with remaining spongefingers and mascarpone.  Sprinkle with cocoa and Cadbury Velvet or the chocolate curls .Cover and chill 1 hour.

My friends and I usually end up having deserts at Menottis which is located across the road from Raffles Hotel. They serve a delicious molten chocolate cake ala mode, called Sofiatou with chocolate chip gelato on the side. Their Tiramisu is to die for. Although the selection of deserts are a few, each is worth trying. Menotti’s makes the best Affogato, and they have various types of of it as well to choose from.
