Overcoming the bitter taste of sadness

From the young age of 13, when I started secondary school, I was introduced to the fine arts of pastry, eating them and not making them. I thank Delifrance to the afternoons doing homework with a cup of cappuccino and a flaky, buttery and rich chocolate croissant. Essential elements that combat the stresses of life, my comfort food.

Decades have past, and yet my love affair for pastries and desserts have never gone away, perhaps it’s because they are the only constant bites of sweetness I could ever manage. I guess my post today sounds rather depressing, perhaps because I am. But nothing that sweet silky spoonful of vanilla bean panna cota that Meatworks serves could help overcome. In minutes, a serving is gone. But the lingering taste remains on your tastebuds just like a memory of what something beautiful was. Another dessert I ordered was the tiramisu, a pick me up, that’s what it means in Italian. Just simple ingredients, mascarpone cheese, cocoa, coffee and cake. A melange of sweetness and bitterness balanced to bring a delicate sensation to you. Just like life is, it can be both bitter and sweet, although right now I just really need the sweetness to overwhelm the bitterness. The last dessert I tried was the chocolate trilogy, simply perfect, layers of mouse, cake and dark chocolate ganache served with raspberries. Sounds simple, but in it’s simplicity one tastes the complexity it took to assemble it. And like the complexities of life, things just turn out right sometimes and sometimes they do not, and so we should just have our cake and indulge in that temporary bites of sweetness that comes to us.

Non-Alcoholic Tiramisu

A simple non-alcoholic pick-me-up, pretty easy and simple to do which I make for my friends and family. Some people go clubbing, drinking or what not during college, I spent my time on the dancefloor, the lecture theater or the kitchen baking.

Ingredients:
3 egg yolks
1/3 cup icing sugar
2 teaspoons vanilla extract
250 gm mascarpone cheese
24 ladyfingers/spongefingers
1 cup coffee (Nescafe works)
Unsweetened cocoa powder
Cadbury Velvet (Or get a bar of dark chocolate and use an peeler/knife and make curls of chocolate)

Directions:
Beat yolks with sugar and vanilla until smooth and light yellow. Fold mascarpone into yolk mixture. Set aside.

Soak spongefingers in coffee and arrange 6 of them in the bottom of a dish(whatever, I dunno what size, something similar to Sara Lee pound cake packaging or if you’re making a birthday cake, the spring release ones would be ideal). Make sure the spongefingers are not too soggy. Spread half the mascarpone mixture over the spongefingers. Repeat with remaining spongefingers and mascarpone.  Sprinkle with cocoa and Cadbury Velvet or the chocolate curls .Cover and chill 1 hour.

Biggest Lambshanks in Singapore

Last night we revisited Badoque. I was missing  and have been daydreaming of their Pizarotti, a huge plate of melt in your mouth mushroom and cheese filled  freshly made pasta served with crushed tomatoes and basil..heavenly, you could taste every bite causing the tastebuds on your tongue to tingle, it was that good. I was told by one of their owners that their shanks were more impressive now than they were before, and when it came, I was blown away. It was twice as big than before..wow..definitely deserves the title of the biggest lambshanks in Singapore! It was served on a plate of pasta with bamiah (which is basically ladyfingers in arabic) and their piquant sauce making a delightful symphony on my plate. :) well i was oohing and ahing over it for a long while. mummy ordered a tomatoes based pasta, linguine ala marinara and uda got the cream based ala mare or seafood cream spagetti which he was simply jubilant about, going “this is it, what I’ve been looking for, for a long time, this taste!” yup he was pretty ecstatic over his spaghetti ala mare.  Daddy ordered the lamb shanks like me, and had trouble finishing it and got mummy to help hahaha..seriously it was that huge! And adik got one of the specials of the day, lamb racks served with the mushroom sauce on the side and a greek salad full of feta cheese and yummy tomatoes. can’t help it I love tomatoes and cheese, especially caprese salad mmmmmmmmm  As usual, we always ordered extra to share, and this time we wanted to try the pizza. We chose pizza el senco, it basically had everything on it, the chicken was so tasty, i couldn’t pinpoint what herbs were used to marinate it(perhaps its pesto chicken?), on it also were turkey ham and minced beef oh and plenty of cheese. Their pizza dough was perfect! Magnifique! I’m not gonna order from Pizza Hut anymore…until they make stuffed crust pizzas again, the starburst pizza which was yummy doesn’t count since it’s only for a limited period. At the end of our meal, the very kind owner gave us a plate of their yummy cakes, mango was the best! We took away another pizza el senco to eat at home, can’t help it, it was sooooo every-bite-sends-you-straight-to-heaven :P One of the best pizzas in Singapore!
